Perfectly roasted cauliflower topped with a creamy ranch sauce and melted cheese.
If you have never tried roasted cauliflower you need to stop reading this and go try it. Right now. It is so good, I can easily eat a whole head of roasted cauliflower for a meal. It is so easy to make too! Just chop up a head of cauliflower, toss it with a few tablespoons of olive oil, sprinkle with salt and pepper, and cook.
I read somewhere once that roasted cauliflower was just as good as baked French fries and I was totally skeptical but it is seriously better! And it is way more addicting!
Roasted cauliflower is delicious on its own but this recipe tops it with a creamy two ingredient ranch sauce and shredded cheese. This crispy-cheesy-melty dish is a perfect appetizer or side dish but I have had it as a meal itself, it is that good!
- 1 large head cauliflower, cut into bite sized chunks
- 3 tablespoons olive oil
- salt and pepper, to taste
- ⅓ cup sour cream
- ¼ cup ranch dressing
- ¾ cup shredded cheddar cheese
- Preheat oven to 400 degrees. Spray a cookie sheet with non-stick cooking spray and set aside.
- Toss the cauliflower with olive oil. Spread the cauliflower out on the prepared cookie sheet and salt and pepper to taste. Cook for 35-45 minutes until well browned but not burnt. Stir the cauliflower every 10-15 minutes so all edges get cooked evenly.
- While the cauliflower is cooking, in a small bowl stir together the sour cream and ranch dressing.
- When the cauliflower is done cooking, transfer to serving dish, drizzle with ranch mixture, and top with shredded cheese. Note: I sometimes put the whole dish in the microwave for 30 seconds to a minute to get the cheese really melted.
- Serve immediately.
