Stir fry is one of the easiest dishes to throw together on busy week nights.  At our house we almost always use chicken in our stir fry but pork, beef, or shrimp are also delicious options! In the freezer section of the grocery store there are bags of stir fry vegetables that are super easy to throw in if you don’t have time to cut up fresh vegetables.

Peanut Butter Stir Fry

The best part of this recipe is the peanut butter sauce that gets tossed with the chicken, broccoli, and pasta.  The sauce has only 6 ingredients and is really easy to throw together! The soy sauce, chicken broth, ginger, and garlic give the sauce the traditional stir fry flavors. Then the peanut butter and honey add a sweet, peanut kick that makes the sauce amazing!

This dish overall does not taste like peanut butter.  My sister hates peanut butter with a passion and LOVES this stir fry!

Serves: 5 servings
Ingredients
  • 1 cup chicken broth
  • 6 tablespoons soy sauce
  • 6 tablespoons creamy peanut butter
  • 4 tablespoons honey
  • 2 teaspoons ginger
  • 5 cloves garlic, minced
  • 2 chicken breasts, cooked and cubed
  • 8 ounces whole wheat pasta, cooked and drained
  • 2 cups broccoli, steamed
  • ¾ cup peanuts, roughly chopped
  • green onions (optional)
Instructions
  1. In a medium sized saucepan, add the first six ingredients and whisk on medium high heat until lightly boiling. Remove from heat and toss with the chicken, pasta, broccoli, and peanuts. Garnish with green onions if desired. Serve immediately.
