The best thing about waffle sandwiches is that you get the crunch of a grilled sandwich without adding all the butter.  Just pop the waffles in the toaster and stuff with Caesar chicken and romaine lettuce and you have all the crunch you need!  You won’t miss the butter I promise.

Serves: 4 Sandwiches
Ingredients
  • 2 chicken breasts, cooked and shredded
  • ⅓ cup Caesar dressing
  • ¼ cup parmesan cheese
  • Romaine lettuce
  • 8 whole wheat frozen waffles
Instructions
  1. In a large bowl, toss together the chicken, Caesar dressing, and parmesan cheese.
  2. Toast waffles until crunchy and slightly browned.
  3. Divide the chicken mixture among four of the waffles. Top with romaine lettuce and another waffle.
  4. Chicken mixture will stay fresh in an airtight container in the refrigerator for up to one week. Waffles should be toasted right before serving for best results.
