A traditional quiche filled with spinach and cheese with a sweet potato crust.
I love making quiche for dinner. I know it is usually a breakfast food but quiche is so easy to whip together for dinner when you don’t feel like thawing meat.
This quiche is extra special. It has a sweet potato crust!! The sweet potato crust makes this quiche totally different (and totally better!!) than a standard quiche.
The filling of this quiche is just eggs, spinach, garlic, and cheese. The filling is hearty and cheesy and goes perfectly with the sweet potato crust. Breakfast, lunch, or dinner this quiche will be your new favorite!
Sweet Potato Crusted Quiche

Serves: 6 slices
Ingredients
- One large sweet potato
- Salt and pepper
- 5 eggs
- ¾ cup frozen spinach, thawed and patted dry
- 2 garlic cloves, minced
- 1 cup cheese, divided
Instructions
- Preheat oven to 350 degrees. Spray a 9 inch round pie pan with non-stick cooking spray. Peal the sweet potato and slice into thin slices, about ⅛th of an inch thick. Arrange the sweet potato slices on the bottom of the pie pan slightly overlapping until the entire pan is covered. Season with salt and pepper and bake for 15 minutes.
- In the meantime, in a large bowl mix together the eggs, spinach, garlic, and ½ cup of the cheese. Mix well until there are no remaining chunks of spinach.
- Once the crust is done cooking, remove from oven and add the egg mixture. Sprinkle the remaining ½ cup of cheese on top of the eggs. Return to the oven and bake for 40-45 minutes or until the eggs are cooked through.
