Classic caramel bars that are full of caramel and chocolate and surrounded by a buttery oat crust.
These bars are very similar to the classic Carmelita bar although I hesitate the call them a Carmelita bar because these are a lot more crumbly than the classic Carmelita bar! When I think of Carmelita bars, I think of soft gooey bars that are so soft you can eat them with a spoon. At least that’s the way I like them. I’m not the only one out there who doesn’t wait for them to cool, right?!
These caramel bars are just as decedent (or dare I say more decedent) than the classic Carmelita bar! They are full of caramel and chocolate surrounded by a buttery oat crust.
Plus these bars only use one bowl! Just mix the crust ingredients together and throw everything into a 13×9 pan and you are good to go! If you want these bars to turn out beautiful, I suggest letting them cool before cutting but if you are anything like me then just dig in. I won’t judge.
- 1 cup butter (2 sticks)
- 1 and ½ cups old fashion oats
- 1 and ½ white sugar
- 1 and ½ all purpose flour
- ¼ teaspoon baking soda
- 1 and ½ cups chocolate chips
- 1 cup caramel
- Preheat oven to 350 degrees. Spray a 13x9 pan with nonstick cooking spray and set aside.
- In a large bowl, melt butter in the microwave. Add oats, sugar, flour, and baking soda. Stir until combined. The batter will be very thick and crumbly.
- Pour about ⅔ of the batter into the 13x9 pan. Using the back of a spoon or your hands, press the dough evenly in pan. Sprinkle chocolate chips over the dough. Drizzle caramel over chocolate chips. Crumble remaining batter evenly over the caramel.
- Bake for 20 minutes. Let bars cool completely before serving. Bars will stay fresh in an airtight container for two weeks.
